Sweet potato Quesadilla

Sweet Potato and Shallot Quesadillas with Grilled Avocado and Broad beans

Christopher:  ‘We got inspiration for this dish from the BBC Good Food July 2016 Magazine. The sweet potato in these vegetarian quesadillas makes for a really filling meal that will stop you snacking in the evening. We love the addition of broad beans and grilled avocado for that summery feeling’

These Quesadillas take: 25 minutes

Get it:

Four flour tortilla wraps

Two medium sweet potatoes

A couple of handfuls of grated cheddar

Eight shallots, finely diced

Two avocados cut into six wedges per avocado

A big a handful of frozen broad beans

Salt and pepper

Three tablespoons of oil

Make it: 

1. Pierce the sweet potatoes all over. Microwave for around 15 minutes. They should be very tender

2. In a large frying pan with a little oil sauté the shallots for about five minutes until softened. Remove to a bowl

3. Add one tablespoon of oil to the pan lay one the tortillas and sprinkle over half the shallots. Spread over half the sweet potato flesh and half the cheese, season with salt and pepper. Cook for around 3 minutes. The tortilla should be crisp, cover with the other tortilla and flip. Cook for 3 minutes and remove to a plate. Repeat

4. Half the avocado and cut into strips. In a griddle pan cook the avocado on a high heat for around 3 minutes per side

5. Cook the broad beans in the microwave in a little water for around 5 minutes

6. Slice the Quesadillas into quarters and serve with a sprinkling of broad beans and the avocado

These vegetarian quesadilla’s serve: 2-3 people, they also make a great lunch.
