Lemon Sole with a Fresh Mango Salsa

Zoe: ‘This is a great light summer dish that is ready in a flash. The tanginess of the mango mixed with the red onion is a brilliant combination and personally i feel it works wonderfully with the lemon sole. You won’t feel bloated after this meal and you can save some of the mango salsa for a dip at lunch the next day :)’

Lemon Sole on Fresh Mango Salsa

Get it:

Two ripe mangoes, peeled and diced

Half a red onion, diced

A handful of fresh coriander leaves

One red pepper diced

The juice of one lime

Salt to taste

Two lemon sole fillets, skin on

One teaspoon oil

Make it:

1. Combine all the ingredients in a mixing bowl apart from the sole. Leave to infuse for a few minutes

2. In a hot frying pan with a little oil cook the fish for three minutes on each side. Skin side down first

3. Serve the fish on top of the salsa. Sprinkle over some extra coriander leaves if you like

 

This dish serves: 2 people in a summery mood

This dish is really quick and great for a dinner outside in the sun.
