Speedy Beef Burritos!

Christopher: ‘Everyone’s favourite Mexican street food! Here’s a nice quick recipe for those of you looking for a speedy and incredibly satisfying dinner. Nothing beats chopping down on a wrap loaded with spicy beef, grilled red peppers, Mexican rice, beans and salsa – oh and don’t forget the homemade guac!’ 

These Burritos take: 30 minutes max

Get it:

One rump steak, diced

Two sweet peppers, roughly chopped

Three spring onions, thinly sliced

Half a cup of white rice

One can of kidney beans, drained

Half a head of romaine lettuce, shredded

A handful of grated cheddar

Two teaspoons of paprika

Two teaspoons of cumin

The juice of one lime

Four tortilla wraps

Salsa

Sour cream

Salt and pepper

Make it:

1. Cook the rice in slightly salted water for 20 minutes until soft and fluffy. Once cooked stir in the kidney beans

2. Season the beef with salt and pepper; coat in paprika, cumin and the lime juice then cook in a frying pan on a high heat. Once brown all over, add in the peppers and onions and cook for around 3 minutes

3. On a high heat in a dry pan cook the wraps for about a minute on each side. They are ready when little dark spots begin to form

4. Make your wraps by layering lettuce with rice and the beef. Top with cheese, salsa and sour cream. Wrap in foil and take them on the road!
