Baked Lasagne

Christopher: ‘Lasagne is a classic Italian dish, from the bubbling cheesy top to the rich tomato mince – this is a sure crowd pleaser and great go-to for any dinner party.’

This Lasagne recipe takes: An hour and 10 minutes

Homemade Baked Lasagne
Baked Lasagne

Get it:

One onion diced

Two large garlic cloves, crushed

400g lean mince

100g diced pancetta/bacon

Six to eight mushrooms, roughly chopped

Large glass of red wine

One can of chopped tomatoes

One knob of butter

One teaspoon of dried basil

One teaspoon of dried oregano

One teaspoon of tomato puree

One teaspoon of olive oil

One teaspoon of Worcestershire sauce

One teaspoon of balsamic vinegar

One large tomato, diced

Salt and pepper

Lots of grated cheese, we used a mix of cheddar, mozzarella and parmesan

A few sheets of lasagne sheets

For the Béchamel sauce: 

Two tablespoons of butter

Five heaped table spoons of plain flour

100ml of warm milk

Half a teaspoon of nutmeg

Make it: 

1. In a large pot heat the olive oil on a medium heat. Add the onion, garlic and bacon. Cook until the onion is softened and the bacon has started to brown. Add in the mushrooms, mince, basil, fresh tomato and oregano. Cook until the mince has fully browned. Season with salt and pepper

2. Add in the wine, chopped tomatoes, butter, puree, balsamic and Worcestershire and simmer for 30 minutes

3. Meanwhile preheat oven to 180 degrees and make your béchamel. One a low heat melt the the butter in a pan, once melted add in the flour. Mix until it forms a roux (soft yellow ball). Add the warm milk in bit by bit, there should be no lumps and the roux should be a thick, smooth consistency – add more milk if needed. Season and stir in the nutmeg. 

4. In a deep dish layer the meat topped with lasagne sheets then béchamel. Repeat to the top, the last layer should be béchamel. Sprinkle over the cheese and bake for 30 minutes

5. Remove from the oven and leave to cool for 15 minutes. Serve with a side salad.
