Extra Cheesy Mac & Cheese

Zoë: ‘Mac & Cheese is the comfort food of all comfort foods. A true carb overload and stupidly cheesy, what’s there not to like? Mac & Cheese is great on it’s own, but if you find it a little heavy it is never out of place as a side dish. If you want to make more of a meal out of it, chuck in some bacon and serve with a side salad’

This Mac & Cheese recipe takes: Roughly 40 minutes

Get it:

500g Macaroni

100g grated Mature cheddar cheese (use the tiny holes)

50g grated Parmesan cheese

One pint of milk (or just a large mug worth)

Six/Five tablespoons of plain flour (you be the judge)

Two tablespoons of butter

One teaspoon of Dijon mustard

Make it

1. Stick the oven on 180 degrees and get out a baking dish for later

2. Cook the macaroni pasta in salted water according to packet instructions

3. When the macaroni has 5 minutes left, get out a saucepan and melt the butter on a low heat

4. When the butter has completely melted, slowly add the flour (judge this as you go) and whisk together to form a roux. This basically needs to look like a thick smooth yellow ball in your saucepan, if it is still too liquidly add a tad more flour

5. Heat up the milk in the microwave, keeping your roux on a low heat slowly add in the warm milk until you have your desired sauce consistency. Feel free to add more/less milk to your liking

6. Add in the grated cheddar cheese, mustard and about half of the parmesan. WHISK. Season with salt and pepper to taste

7. Now are you happy with your sauce? It is a personal thing so feel free to add more cheese if you like. Keep stirring the sauce and slowly add in your cooked macaroni

8. Pour evenly in to your baking dish and cook for 20 minutes

9. Take out the oven and check on it. Top with Parmesan cheese, bake for another 10 minutes then stick under the grill for 5 minutes until bubbling and golden

10. Serve 🙂
