South-Western Style Salad

South-Western style two cheese salad with a lime vinaigrette

Christopher: ‘After all that meat over the weekend we needed a break. This is a nice American style salad which is kept interesting by two beautiful cheeses and a sharp lime dressing.’

This american style salad takes: 15 minutes

Get it: 

One can of sweet corn, drained

One avocado, roughly chopped

One can of black eyed beans, drained

Half a punnet of cherry tomatoes – halved

Four spring onions, roughly chopped

One head of romaine lettuce, shredded 

A few good size slices of halloumi

100g of feta cheese, all crumbled and that

 

For the dressing:

The juice and zest of two limes plus a few spare wedges to serve

One teaspoon paprika

Four tablespoons olive oil

One tablespoons sherry vinegar

One teaspoon brown sugar

One teaspoon of clear honey

Salt and pepper

Big handful of parsley, roughly chopped

Make it: 

1. Toss together salad ingredients with salt and pepper, minus the halloumi 

2. Mix the dressing together in bowl until sugar dissolved. Leave to infuse for around 15 minutes

3. Pat the halloumi dry with kitchen roll. In a hot pan fry for 2 minutes on each side until golden brown

4. Serve the salad topped with halloumi, a little dressing and a couple of lime wedges

 

This salad serves:

2 hungry people OR makes a great side dish
