Homemade Meatloaf with a Tomato sauce

Christopher: ‘Most of us Brits will rarely (if ever) have Meatloaf as a meal, but its a staple in most American homes. Super cheap and easy to make in large quantities it’s a great choice when it comes to feeding a group on a budget. Upon researching this one I found that everyone on the internets grandmother seems to have their own special meatloaf recipes, so please let us know yours. Love to try this again and some point.’

This meatloaf dish takes: 1 hour

Homemade Meatloaf

Get it:

Eight potatoes, peeled and cut into quarters

Two carrots, cut into small batons

One cup of frozen peas

Quarter of a pint of milk

One knob of butter

For the Meatloaf:

250g ground beef

Eight sausages, skins removed

Half an onion, diced

A handful of fresh basil, roughly chopped

A handful of fresh parsley, roughly chopped

A teaspoon of ground oregano

One teaspoon of garlic granules

Six cream crackers, broken into tiny crumbs in a blender

One egg

For the tomato sauce:

One can of plum tomatoes

Two tomatoes, roughly chopped

One tablespoon of Worcestershire sauce

One teaspoon of mustard

Two tablespoons of brown sugar

Mash, roast potatoes, vegetables and meatloaf

Make it: 

1. Mix together the meatloaf ingredients in a bowl and season with salt and pepper. Pat tightly into a loaf tin

2. In a saucepan cook the garlic in some oil for a few minutes. Throw in the rest of sauce ingredients and bring to boil. Simmer for half an hour

3. Part boil the potatoes in salted water, should take around 10 minutes. Preheat the oven to 180 degrees

4. Roast half the potatoes in oven for one hour

5. Blitz sauce in the blender and brush about a third of it over the meatloaf

6. Boil carrots with a little sugar for around 10 minutes. Drain and add to the dish of potatoes – roast for an hour

7 Add the meatloaf to the oven and cook for 45 minutes

8. Take the remaining potatoes and mash in a potato ricer. Heat the milk and butter in a saucepan and add to the mash. Season with salt and pepper

9.Cook for peas for 5 minutes in boiling water

10. Serve with the remaining tomato sauce

 

This meal serves:

4 people and you are likely to have some Meatloaf left over.
