Sticky Barbecue Pork Ribs and Baked Buffalo Wings with a Stilton Dipping Sauce and coleslaw

Christopher: ‘ Tonight we are serving up New York Style Buffalo wings and heavenly Kansas City style barbecue sauce coated ribs.

There is no better way to enjoy watching sport than Ribs & Wings with a nice cold bottle of beer. So tonight I invite you into my living room  as I watch the Italy v Germany game and eat way too much meat. But hey, there’s carrots and celery so its healthy….’

These Ribs & Wings take: 3 hours (cooking the ribs takes a while)

Get it:

For the ribs:

One rack of pork ribs

A handful of chopped parsley

 

For the Dry Rub:

Two tablespoons brown sugar

One and half tablespoons of ground paprika

One teaspoon garlic granules

Two tablespoons onion granules

One tablespoon of ground black pepper

One teaspoon of salt

 

For the Barbecue sauce:

Four tablespoons of black treacle

One onion, diced

Four garlic cloves, roughly chopped

One tin of chopped tomatoes

Two teaspoons of paprika

One tablespoon of mustard

One tablespoon of Worcestershire sauce

One tablespoon of cider vinegar

One teaspoon of Tabasco sauce

A knob of butter

One pint of water

For the Wings: 

Eight to ten chicken wings- as many as you fancy really

Two carrots, peeled and cut into small batons

Two sticks of celery, cut into small batons

 

For the Buffalo sauce:

One teaspoon garlic granules

One tablespoon cider vinegar

One tablespoon paprika

One tablespoon of Worcestershire sauce

Two teaspoons of celery salt

Six tablespoons of hot sauce

Three tablespoons of honey

One tablespoon of olive oil

 

For the Stilton sauce:

800g Stilton

150ml double cream

Half a pint of milk

Teaspoon of ground black pepper

 

For the Coleslaw:

Half a red cabbage, roughly chopped

Two carrots, cut into small matchsticks

Half an onion, diced

Two tablespoons of mayonnaise

One teaspoon of mustard

Half a teaspoon of paprika

Make it:

1. Mix together all the ingredients for the buffalo sauce and coat the wings in it. Leave covered in he fridge for marinate for at least 2 hours

2. Rub the ribs with the dry rub. Wrap in foil and cook in the oven for 3 hoursono 100 degrees

3. For the barbecue sauce, melt the butter in saucepan on a medium heat. Cook the onions and garlic until soft. Add the remaining sauce ingredients, bring to boil and leave to simmer for around an hour

4. Turn the oven up to 180 degrees. Pour the chicken wings and sauce into a roasting dish, remove the foil off the top of ribs and pour over half the barbecue sauce . Cook both in oven for 45 minutes. Save the rest of the sauce for dipping later

5. In saucepan pour in the milk, cream and stilton. Season with black pepper and cook, stirring constantly, until formed a thick sauce. Should take no more than five minutes

6. In a mixing bowl, stir together all the coleslaw ingredients

7. Remove the meat from the oven and sprinkle parsley over the ribs

8. Serve ribs, wings, coleslaw and sauce with a few carrot and celery sticks. And beer. Lots of beer 😀
