Pulled Pork Salad

Slow cooked barbecue pulled pork salad

Christopher: Pulled pork is a great way to make a cheap cut of meat into a tender delight and all it takes is a mere eight hours of cooking. My tip would be prepare the sauce and pork the night before and leave covered in the fridge. All you’ve got to do is turn on the slow cooker in the morning then go about your day. Pulled pork can be a little heavy so we’ve done it with a light salad – it makes a perfect edition to the BBQ table 🙂

This pulled pork salad takes: 8 hours in the slow cooker

Get it:

A medium size cut of pork loin/shoulder

One red onion roughly chopped

Two Bramley apples, peeled and finely chopped

For the salad:

One head of romaine lettuce, shredded

One yellow pepper, diced

Half a cucumber, roughly chopped

One can of sweet corn, drained

One carrot, cut into ribbons with a peeler

For the barbecue sauce:

Four tablespoons of ketchup

Half a pint of water

Two tablespoons black treacle 

Two  tablespoons Worcestershire sauce

One teaspoon of cider vinegar

One tablespoon white wine vinegar

One tablespoon mustard

A few drops of tabasco sauce

Half a teaspoon of garlic granules

One teaspoon of onion granules

Make it: 

1. Combine all the ingredients for the sauce in a pan, bring to boil and reduce by half. Season with salt and pepper and leave to cool

2. Remove any fat from the pork, throw into a slow cooker along with the apple, onion and barbecue sauce. Season with salt and pepper.  Cook for 8 hours. Go to work or something, I dunno

3. Shred the pork with two forks. Toss together the salad. Serve topped with the pork
