Fish Tacos with a fresh tomato salsa

Christopher: ‘July the 4th is coming up fast, so this week our theme is American! We decided to kick off with tacos… Wait they’re Mexican right? To be honest a lot of what we know as Mexican food has very strong American influences and apparently fish tacos are the state dish of California. All I really know is they’re delicious. Very light, very fresh and most importantly full of flavour.’

These fish tacos take: 25 minutes including prep

Get it: 

Two white fish fillets, cut into thick strips. We’ve used haddock but use whatever takes your fancy

Two slices of white bread, blended to fine crumbs

One egg, beaten

Half a cup of plain flour

Half a head of shredded red cabbage

Four spring onions, cut lengthways into thin slices

Half an onion, diced

Eight cherry tomatoes, diced

Half a head of shredded romaine lettuce

One chilli, finely chopped

Three limes

A pack of small corn tortillas

A handful of coriander, finely chopped

One tablespoon of oil

One teaspoon of sugar

Sour cream to serve

Fish Tacos

Make it:

1. For the salsa combine the onion, tomato, coriander, chilli and the juice of one lime in a bowl

2. Season the fish with salt and pepper, squeeze over the juice from one lime. Dip into the flour, then egg, then breadcrumbs. Put the breaded fish to one side

3. Cook the cabbage in boiling water with the sugar for 10 minutes until softened. Season with salt and leave to cool in a colander

4. In a frying pan on a medium heat, warm up the oil. Place the fish in the pan and cook for 5 minutes on each side until golden brown

5. In a hot, dry frying pan warm the tortillas on both sides until little brown spots appear on them. This should only take a few seconds

6. Serve the fish in wraps with the lettuce, spring onion, cabbage, a little salsa, wedge of lime and a dollop of sour cream

Well it depends on how many tacos you want really! We had 3 each and then Zoë took some for lunch the next day…. so lets say 4 people 🙂
