Buddha Bowl

Maple roasted Sweet potato, Kale , red onion and chickpea buddah bowl with a spicy tomato sauce

Zoe: You have likely seen these ‘Buddha Bowls’ scattered across Instagram. Since we are currently in the mist of our Superfood week  we figured it was the perfect time to try it out!

This Buddha bowl is a vegan’s paradise. Stuffed to the brim with superfoods such as sweet potatoes, chickpeas, kale and chilli you can’t go wrong.

Get it:

One sweet potato cut into thin semi circles

One bag of kale

120g broccolini

One can of chickpeas

One tablespoons of olive oil

One red chilli seeded and diced (optional)

One roughly chopped red onion

One tablespoon of maple syrup

Chickpea covering:

One teaspoon Paprika

Half teaspoon cayenne  pepper

Half teaspoon garlic granules

Half teaspoon cumin

 

For the sauce

One can of chopped tomatoes

Five basil leaves

One teaspoon of dried basil

One teaspoon of garlic granules

One teaspoon of honey

One teaspoon with balsamic vinegar

A few dashes of Worcestershire sauce

One teaspoon cayenne pepper

One tablespoon of maple syrup

Make it:

1. Preheat the oven to 180 degrees

2. Place the onion and sweet potato in the oven dish and pour over half the oil and half the maple syrup and season with salt and pepper, roast for 15 minutes

3. In a saucepan cook the tomatoes for 5 minutes. Add the remaining sauce ingredients and simmer for 10 minutes

4. Top with the broccolini and kale and pour over the remaining oil and syrup. Roast for a further 15 minutes

5. In a mixing bowl mix the chickpeas, cumin, paprika, turmeric, garlic granules and cayenne pepper with a little salt and pepper. Sauté for 10 minutes until crispy

6. There should be a mixture of syrup and oil at the bottom of the oven dish. Drain into the sauce and stir in.

7. Serve in a bowl topped with a the chilli (if you are like Zoë) and a little sauce.
