Christopher: ‘Everyone loves a cheese toasty, but this one is all fancy and French and that. This makes a perfect lunch or brunch dish – satisfy those carb and cheese cravings.’

This lunch takes: 15 minutes to make


Get it:

Twelve small slices of crusty bread – (we used a multi-seed bloomer)

Three slices of quality ham

100g grated Gruyère (Cheddar would be fine too)

For the Béchamel Sauce: 

One tbsp flour

200ml milk

Knob of butter

A pinch of nutmeg

Croque-Monsieur : Before baking

Make it:

1. Pre-heat your over to 200 degrees

2. Melt the butter in a hot saucepan and slowly mix in the flour to make a roux (thick paste).

3. Slowly add in the milk, keep stirring until you make a thick sauce (it can help to warm the milk in a microwave first)

4. Season with salt and pepper and stir in a pinch of nutmeg to taste

5. In an oven dish lay 6 slices of bread side by side, spread each one with a little Béchamel (only use half) – then layer with half of the cheese, the ham and another slice of bread

6. On top of the sandwiches spread over the rest of the Béchamel sauce and top with the remaining cheese

7. Bake for around 10 minutes – until the bread is toasted and the cheese has melted
