Asian-style salmon on a bed of stir-fried vegetables and soft udon noodles, sprinkled with sesame seeds

Christopher: ‘This very simple asian style salmon dish is both healthy and delicious. It has a fab mix of soft udon noodles and crunchy roasted sesame seeds’ 

This salmon salad takes: 40 minutes including prep

Get it: 

Two salmon fillets

Half a cucumber diced

One red pepper sliced into strips

150g sugar snap peas

300g udon noodles

Big handful of sesame seeds

Good glug of Sesame oil

Tablespoon runny honey

Two garlic cloves crushed

A thumbnail of grated ginger

One Tablespoon of  Soy sauce

One Teaspoon of Fish sauce

Make it: 

1. Pre-heat oven to 180 degrees

2. Mix together the soy sauce, fish sauce, garlic, ginger and honey. Cover the salmon in it and leave to marinate covered in the fridge for minimum of one hour. Save a little marinade for later

3. Toast the sesame seeds in a dry pan on a low heat until browned and fragrant

4. Take 1/4 of the seeds and sprinkle over the salmon with a bit of salt and bake in foil for 25 minutes

5. When the salmon is nearly ready sauté the peppers and sugar snaps for 5 minutes until the peppers start to wrinkle

6. Add the noodles and stir in for a minute or so until warmed through

7. Plate up mixing in the remaining sesame seeds and the cucumber and top with the salmon.

8. Drizzle over the remaining marinade and serve
